I love this quote by Sarah B, author of the Simple Abundance: A Daybook of Comfort and Joy.   It’s a book I’ve had on my Amazon wish list for some time.

I give gratitude every day to wake up to this beautiful sunrise.  Be it rain or shine, it’s always a blessing, my simple abundance.

On the food front, Spencer found a mini-countertop ice maker on mega-sale at Home Depot, which we couldn’t pass up for his birthday.  It kicks out 8 cubes of ice in exactly 8 minutes.  He was not interested in dinner, although I dare say we should have eaten.

Shy of going out, I purchased ingredients to make another trial run at my “Rasta Vodka Pasta”.

Friends of old say it was my best. I have no written recipes from my early days, so I’m going totally by memory here. I’ve been trying to veganize it, but it calls for evaporated milk. I’ve tried coconut milk, silken tofu, veg sour cream. Nothing seems to match my recollection of the recipe.

 

 

I’ve researched other alternatives to evaporated milk. Some say to simply take non-dairy milk, and simmer it until it’s reduced by half. I’m going to give this a try, sometime here this week.

I’m tempted just to make it as I recall, with the dairy, just to get a taste test in, so I can get the v-twist right. Is that wrong of me …? This is one of the very few recipe’s I’d cheat for. Any other veg*n’s recipe writers out there who’ve given in to an old recipe, just to see if their veganized version really does hit the mark ?
